In need of a little pick-me-up? Here are our favourite quick and easy recipes for when you’re craving something sweet. All recipes require 6 or less ingredients and are super fun to make at home! So, put on some music, grab your apron and let’s get baking…
Coconut slice
This coconut slice tray bake is so easy to make, and totally delicious. It's also a great one to get the kids involved with!
- Can be gluten-free
- 6 ingredients
Ingredients:
- 200g caster sugar
- 200g softened butter
- 200g self-raising flour (can use gluten-free flour)
- 100g desiccated coconut
- 3 eggs
- 1 full cap of vanilla essence
Method:
Step 1: Preheat oven to 180 C.
Step 2: Cream together the sugar and butter until smooth, then gradually whisk in the eggs until combined.
Step 3: Add in the vanilla essence and mix.
Step 4: Fold in the flour and desiccated coconut.
Step 5: Spread into a tray lined with baking paper and bake for 25 minutes. Leave to cool before cutting into slices.

Banana pancakes
The ultimate comfort food! These 3-ingredient banana pancakes are the perfect brunch food or dessert. Top with some fresh fruit and whatever else you fancy.
- Can be gluten-free
- 3 ingredients
Ingredients:
- 1 small ripe banana
- 1 medium egg
- 2 tablespoons of wholemeal self-raising flour (can use gluten-free flour)
- Oil spray (for frying)
Method:
Step 1: Mash the banana with a fork in a bowl. Whisk in the egg, followed by the flour until the mixture is smooth.
Step 2: Heat a non-stick frying pan with a little oil spray.
Step 3: Spoon 2 tablespoons of the batter mix into the pan and spread out with the back of a spoon until 1cm thick.
Step 4: Fry for 1-2 minutes on each side, or until golden and cooked through.
Step 5: Serve with your favourite toppings...how about some sliced banana, fresh blueberries and glug of maple syrup!?
Oatmeal cookies
A totally delicious healthy cookie recipe that’s also completely vegan and gluten-free too. These cookies go so nicely with a cup of coffee in the afternoon or as a film snack!

- 5 ingredients
Ingredients:
- 1 banana
- 160g of apple sauce
- 4 tablespoons of agave syrup
- 240g of rolled oats
- 80g of raisins
- Anything else you want to add! Maybe dark chocolate chunks, pecans or other dried fruits
Method:
Step 1: Preheat oven to 200 C.
Step 2: Mash the banana in a bowl with a fork, then mix in the apple sauce and agave syrup.
Step 3: Add in the rolled oats and raisins and stir until everything is combined.
Step 4: Spoon the cookie dough (1.5 tablespoons of the mixture) onto a baking sheet and press down with the back of a spoon to flatten slightly.
Step 5: Bake until golden for 15-20 minutes. Set aside to cool before digging in!
Sweet potato brownies
There’s nothing more comforting that biting into a fudgy brownie still warm and gooey from the oven…heaven! Our brownie recipe is healthier than most, but still utterly scrumptious.

Ingredients:
- 1 sweet potato (120g), mashed and cooled
- 100g almond butter
- 2 tablespoons of pure maple syrup
- 4 tablespoons of cocoa powder
- Chocolate chips (optional)
Method:
Step 1: Preheat oven to 180 C and grease a loaf pan.
Step 2: Using a food processor, combine the mashed sweet potato, almond butter, maple syrup and cocoa power to form a smooth brownie batter.
Step 3: Pour the batter into the loaf pan and bake for 20 minutes or until cooked through. Allow to cool before cutting into slices. Enjoy!
